Red beans are foodstuffs from class nuts have high fiber content and low glycemic index. also contain flavonoids, polyphenols, resistant starch, saponins. That compounds been to function as anti-obesity, anti-diabetic, anti-hyperlipidemia. fermented fermentation product Rhizopus orizae. Fermentation assumed can improve nutritional value health benefits red beans. The purpose this study was determine effect on body weight, lipid profile, blood glucose Sprague Dawley rats with carbohydrate high-fat diets. This research an experimental design pre-post test. Twenty-eight were divided into four groups. first group given water standard feed 28 days. While groups 2, 3, 4 fed high-carbohydrate diet 14 days then drinking water, fermented, steamed Weight loss weighed every week, residue day, profiles measured before after intervention. results showed lose glucose, significant (p <0.05).
